Working our way through a large assortment of gluten free flours, we have been using the leftovers, a few ounces of this, three quarters of a cup of that, to make crepes.

As expected, you really can mix and match flours quite freely. Today was Bob's Red Mill all purpose, a bit of sorghum, some almond flour, and some spelt*.

At other times, the mix included chickpea flour and coconut flour.

Best avoided for crepes, though, are flours with ...🧵
