Throwback to my visit to Khushi Indian cuisine! Located in the heart of Oslo, this beautiful restaurant is co-owned by three partners—one from Bangladesh, one from India, and one from Pakistan. They kindly invited me to their wonderful setup, and I enjoyed the vibrant, bollywood-inspired décor.

As far as chain restaurants go, I was really surprised by how much I ended up loving Dishoom. I, like most Indian folks in the diaspora, am very picky with Indian cuisine and this restaurant was just so good! They serve food specifically influenced by Mumbai. The keema pav actually sent little ripples of joy down my spine and I've thought about the kheer creme brulee at least once a day, everyday, since I went here. Also, the espresso martini pictured is a spicy chai espresso martini which I have mixed feelings about, because why defile chai or an espresso martini in this manner? Anyways, the last thing I want to say about this chain is that each location is unique and the one I went to in Kensington had live music (they were all dressed in formal attire and playing what I'm going to call Mumbai jazz). Overall, was very into the whole vibe and I def recommend it if you're in the UK. London, 2022.

Details are everything.
The sole difference when making Indian Paneer versus Mexican Queso Fresco is 30°F in when you add the acid to the milk.
The chemistry at the two different temperature is so profoundly different that they both have different cooking and melting properties once completed.
Paneer is harder and resists melting and the Queso Fresco is soft and melts (think quesadillas).

Exploring the corners of our neighbourhood still. We were regular visitors before, but there are little hidden gems. The Indian Spice Divine shop has a little restaurant in it, specializing in Indian vegetarian street food (chaat, pani puri, idli etc). What a treat!

The sandwiches are very interesting. We got an aloo matar and a corn-and-cheese. Turns out each order is two grilled sandwiches.

I made this recipe last night, and it came out perfectly. I haven't run across many recipes that didn't need to be adjusted in some way, so this one is exceptional. Made "mild" by our standards for the kiddos.

Basmati rice and naan. Ten servings for $40. Normally, this is a $15-18 plate in a middle of the road restaurant.

and report: On the toilet several times from 1am-5:30am.

I'm trying out a new recipe. I'll let you know how it pans out for me. My issues with milk seem to be with the biology that comes along with it. I eat this dish in the restaurant and it hasn't killed me. I also think that the longer you stew/brew/simmer the sauce, the better for me. Breaks down the lactose and kills any other biology that came with the yoghurt and cream.
