Mennonite cranberry sauce* muffins
This is dedicated to @SunnJax for all his delicious looking baked goods. His cranberry coconut loaf inspired me to make this recipe. But I turned it into muffins bc everyone in my house is so lazy-pants, they wouldn’t bother slicing for themselves so a loaf would just go bad on the counter.

Mennonite cranberry sauce recipe: equal parts apple, strawberry jam, cranberries, orange+zest
It’s easier to start with frozen cranberries. Put them in a blender and chop roughly then add the orange and fine zest and blend again so orange is juiced. Then quickly chop the apple, add to blender and stir the jam all over the apple. (It keeps the apple from turning brown.) Then blend again until preferred consistency.
Some people add walnuts but I don’t like it personally.
I used half the orange of the original cranberry sauce recipe so the batter wouldn’t be too wet. Baked at 350 for 23 minutes.
@jblue yum! Looks good!!
@jblue They look fantastic! I’m so happy I provided a little inspiration.
I’m about to put my dinner together (finally) — been doing bits and pieces all day. Looking forward to it!
