Mmm.</p><p>I used leftover homemade <a href="https://vmst.io/tags/carnitas" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>carnitas</span></a> &amp; some white <a href="https://vmst.io/tags/cheese" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>cheese</span></a> plus minced <a href="https://vmst.io/tags/cilantro" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>cilantro</span></a> (sorry, <a href="https://vmst.io/tags/CilantroTastesLikeSoap" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>CilantroTastesLikeSoap</span></a> people, I love it!). Rolled tortillas in green enchilada sauce, filled them, packed into a 9x13" pan topped with more sauce &amp; cheese, then into a 350° oven until everything got bubbly. Served with more cilantro &amp; pickled <a href="https://vmst.io/tags/RedOnions" class="mention hashtag" rel="nofollow noopener noreferrer" target="_blank">#<span>RedOnions</span></a>. Savory, cheesy, &amp; slightly punchy from the onion &amp; citrus flavors.</p><p>Was it "authentically Mexican?" Nope.
