Chris RuppelEL VOLCANITO 1½ oz grapefruit juice ¾ oz fresh lime juice 1 oz maple syrup ¼ oz cinnamon syrup 1½ oz Black Blended Rum ❺ 1½ oz Pot Still Lightly Aged Rum ❶ Garnish: spent lime shell, mint sprig Method: Combine all ingredients except overproof rum in a mixer tin with 12oz crushed ice and flash blend for 10 seconds. Open pour into the glass and garnish with mint and spent lime shell face up. Pour the overproof rum into the spent lime shell, and serve drink. Ignite the rum inside the lime shell once the glass is in place. Dusting the flame with cinnamon is always a sure-fire way to impress your friends! Although this type of cocktail normally makes its rounds in the fall, I still love to reach for something like it when winter stubbornly marches on. Fill with 12 oz crushed ice and 4-6 agitator cubes. Flash blend and open pour with a gated finish into a footed pilsner glass. If you don't have a drink blender (I don't) then shaking obviously does the trick. For the garnish use one spear for three maraschino cherries and the pineapple chunk. Place horizontally on the rim of the glass. Add the remaining ingredients to a drink mixer tin. Fill with 12 oz crushed ice and 4 to 6 agitator cubes. Flash blend and open pour with gated finish into the glass. Garnish. I love this one in the fall season. Up front it looks like a summer sipper, but all those spices from the syrups and bitters really give it an autumn vibe. This one is one of my favorite tiki drinks. This version is from the Smuggler's Cove book, page 266. In it Martin Cate emphasizes that a funky Jamaican rum is needed to stand up to the hearty dose of absinthe. Jamaicans are far and away my favorite rums so this one always hits the spot for me. Pictured in the background is Hamilton's black pot still, which is the specific rum called for in this drink. Garnish: pineapple frond, mint sprig, lemon peel This is from Smuggler's Cove and is a great one for summer. The vanilla brandy really steps to the front as the ice melts. * Vanilla Brandy: Split a vanilla bean lengthwise, cut into three equal pieces, and add the pieces to a bottle of brandy. Reseal the bottle, and let rest at room temperature for two weeks, before removing the beans and discarding. Add 2 ounces of demerara syrup to the brandy and mix well.
